Black Bean and Couscous Salad with Chicken

This recipe is great. If for no other reason, "couscous" is such a funny-sounding word, and is so easy and quick to make. I found this recipe on allrecipes.com, and made a few of my own changes.

Salad:
1/2 red bell pepper, chopped
1 cup of corn (frozen is fine)
1 can of rinsed and drained black beans
2 green onions, chopped
1 handful of chopped parsley (or cilantro, if that floats your boat)
1 cup couscous
1 cup chicken broth or water
1 avocado, sliced

Dressing:
zest and juice from two limes
3 tablespoons olive oil
2 teaspoons white vinegar
1/2 teaspoon cumin

1 chicken breast

Cook the chicken. I usually heat a little bit of olive oil in a pan, toss in the chicken, cover and let cook for about 8 minutes per side.

Bring the water to a boil, then stir in the couscous. Immediately remove from heat, cover and let stand for 5 minutes. After 5 minutes, fluff with a fork and stir into the salad.

While chicken is cooking, whisk together the dressing. Chop up salad ingredients (pepper, onion, parsley), and mix in a bowl with beans, corn and couscous. Stir in the dressing.

Slice chicken and avocados. Serve a large spoonful of salad mixture with chicken slices on side and garnish with avocado.
